The sweet baby potatoes and sauteed leek and onions make this tomato and bacon potato bake a great twist on the traditional pasta bake.
You say, Pasta, I say Potato
Yeh, ok, it doesn’t have the same ring to it as “Potato” / “Potato”. This is one of those recipes where you just shot anything you’ve got left in a pan and hope for the best. and I must admit, it didn’t disappoint.
There’s nothing wrong with Pasta bake sauces that you can get from every supermarket. They vary in price based on the brand you purchase, but they all are just a little bit dull. They all lack a little bit of something. However, they are ideal if you just want to make a quick pasta bake of course.
I fancied something a little different, so decided to add some additional ingredients and switch it up a bit and swapped the pasta with potatoes. and hey presto we have Tomato and Bacon Potato Bake

Tomato and Bacon Potato bake
Ingredients
- 495 g Tomato and Bacon Pasta sauce Doesn't matter on the brand
- 900 g Baby potatoes roughly chopped
- 5 rashers Unsmoked Bacon Cut finely
- 40 g Leek (1 large leek chopped roughly)
- 100 g Onion (1 medium onion – halved and sliced)
- 30 g Butter
- 1 pinch Salt Pepper for seasoning
- 200 g Grated Cheddar Cheese
Instructions
- Preheat the oven to 200°c / gas mark 6.In a large pan, over medium heat, add the butter and bacon and fry until starting to crisp. Add the Leeks and onions and sautee until onions become translucent.5 rashers Unsmoked Bacon, 40 g Leek, 100 g Onion, 30 g Butter
- Boil the potatoes for approx 10 minutes, and then drain.900 g Baby potatoes
- Add the potatoes to the leeks, onion and bacon, ensuring the potatoes are well covered with the juices from the pan. Season with salt and pepper900 g Baby potatoes, 5 rashers Unsmoked Bacon, 40 g Leek, 100 g Onion, 30 g Butter, 1 pinch Salt Pepper
- Add the "pasta" sauce to the pan. Pour the contents of the jar and then fill the jar halfway with cold water and add to the pan. Stir so that it is well combined.495 g Tomato and Bacon Pasta sauce
- Spoon the contents of the pan into a baking dish and bake in the oven for 20 minutes.495 g Tomato and Bacon Pasta sauce, 900 g Baby potatoes, 5 rashers Unsmoked Bacon, 40 g Leek, 100 g Onion, 30 g Butter, 1 pinch Salt Pepper
- Remove from the oven and add the cheese over the top of the bake, making sure it is well covered. Place back in the oven and bake for a further 20 minutes, until the cheese is golden brown.200 g Grated Cheddar Cheese

It’s great, you can add what you want into it too. Chicken would be a great addition.
