Recipe; Pan fried chicken with white wine sauce

Pan fried chicken with white wine sauce is such a simple dish to make. Pan-fried chicken with garlic, rosemary and thyme adds a new level of flavour to the chicken. It goes well with vegetables, pasta, rice or salad.

I don’t normally pan fry chicken. I much prefer roasting it in the oven. For a change, though, I thought I’d pan fry it. Pan-frying chicken is a great way to get a crunchy and crisp outer to the chicken leaving the inside juicy and full of flavour. It’s also a much quicker way to cook chicken portions if you are short on time.

Pan-fried chicken with white wine sauce, flavoured with garlic, rosemary and thyme.

  • 4 chicken breasts skin removed
  • 150 ml Single cream
  • 150 ml semi-skimmed milk
  • 100 ml white wine
  • 2 tbsp oil vegetable / olive
  • 2 garlic cloves squashed
  • 4 spring onions roughly chopped
  • Rosemary and Thyme
  • Salt and Pepper


  • Heat the oil in a large non-stick pan over a medium-high heat
  • Add the chicken breasts and garlic cloves to the pan
  • Season generously with rosemary, thyme, salt and pepper.
  • Cook chicken for approx 15-20 minutes, turning halfway through.

  • Remove the chicken from the pan and keep warm (in a warm oven or in foil)
  • Remove the garlic cloves from the pan and add the spring onions and wine
  • With a spoon stir the wine, removing all of the chicken goodness that is stuck to the pan.
  • Turn the heat down to medium-low and allow the wine to reduce to a caramelised consistency.

  • Add the cream and milk to the pan and stir well. Simmer on very low heat for 5 minutes.

  • Serve the chicken and spoon the white wine sauce over the chicken. (Serve with your choice of vegetables, rice or pasta)
